Raw Superfood Vegan Blueberry Cashew Cream Pie

For the crust you will need:
  • 1/2cup soaked raw brazil nuts
  • 2 heaping tablespoons of raw honey or sweetner
  • 1 cup coconut flakes
  • 1 heaping table spoon raw cacao powder
  • 1/4 cup coconut oil
  • 3 tablespoon pre-soaked chia seeds
For the filling:
  • 1 cup soaked overnight raw cashews
  • 1/2 cup blueberries (organic frozen preferably)
  • 2 heaping tablespoons honey
  • tiny pinch of seasalt
  • 1/2 cup coconut milk

  1. In food processor, blend all crust ingredients until mixed. Doesn't need to be smooth, just moldable.
  2. Press into 8" pie pan and dehydrate on 120 for two + hours, until dry. Should look almost like graham cracker crust!
  3. Blend all filling ingredients in blender until smooth . pour into pie crust and chill for one +hour. 
  4. Top with some coconut flakes and blueberries.
