Raw Vegan Tacos


You will need
  • 1 cup soaked walnuts
  • 1/2 cup cilantro
  • 1/2 cup parsley
  • 1/2 cup olive oil
  • 4 sun-dried tomatoes soaked
  • 1 avocado
  • wedge of lemon
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp ginger powder
  • 1 diced tomato
  • hot pepper or hot sauce to taste
  • pinch of seasalt
  • 1 bunch of collards, romaine, or kale, for the "taco" wrap
  • nutritional yeast for the "cheese"
  1. Drain & blend walnuts in processor with a bit of olive oil till chopped
  2. Throw in sun-dried tomato, spices, squeeze of lemon, and pepper/hot sauce till almost smooth
  3. Place the walnut mixture on your greens and add avocado, tomato, cilantro, and nutritional yeast for a cheesy topping.
  4. Roll that shit up and smoke it... wait, I meant...
  5. eat it ;)
