Raw vegan spaghetti,creamy pesto,& portobello "meat"balls

For the spaghetti:
5 Zucchinis or yellow squash, you can slice them with a julienne slicer or just use a vegetable peeler! Use scraps in juice!

For the meatballs:

  • Soak 3 portobello mushrooms, 1/2 cup walnuts, 4 sundried tomotoes in Bragg's Aminos and distilled water for a few hours.
  • 1/2 cup Olive Oil
  • 1/4 cup chia seeds
  • 3 scoops powdered greens
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Baking parchment
Blend everything in food processor, adding mushrooms  second to last, and slowly adding the olive oil to help things keep moving. Should be smooth but a little runny. This is when you add the chia seeds, blend, and let sit for about ten minutes. They will soak up the extra water!   Scoop some into meatball shapes and  then these need to go in the oven on 120 degrees for 12 hours or in the dehydrator.

For the creamy pesto:

  • One cup fresh basil
  • 3 garlic cloves
  • 1/4 cup soaked raw cashews
  • 1/4 cup olive oil
  • 1 tomato
  • 3 sun dried tomatoes 
  • sea salt to taste
  • 3 tsp liquid chlorophyll
Blend olive oil and cashews first, you can add a little pure water if needed. Blend everything else until really smooth!

Pour sauce and meatballs over spaghetti and enjoy! You can also warm in the oven on low for a very cold day when you want some comfort food. :)

Healthy Coffee Substitute!

Okay, after refusing to pay $12 for a little bag of Teeccino, and being totally addicted to coffee (and sick of it)... it was time for a DIY! These ingredients can be hard to come by in person unless you have a really awesome herb section in a local health food store .I am drinking in right now and its amazing! I go to the Health Shoppe in Morristown, NJ... but you can always try amazon.com!
You will need:

  1. 5 oz Chicory Root or granules
  2. 3 oz carob powder
  3. 3 oz dandy greens (dried)
  4. 3 oz burdock root
I sweetened it with Coconut nectar, but you can use honey or whatever you like. Agave Nectar has a higher glycemic index than High Fructose Corn Syrup so stay away from that. This cost  $15 in total. I would use about 1 coffee scoop per 2 cups water, I prefer to use a french press as well. Happy, healthy, sipping.1 :)

Raw Vegan Tacos


You will need
  • 1 cup soaked walnuts
  • 1/2 cup cilantro
  • 1/2 cup parsley
  • 1/2 cup olive oil
  • 4 sun-dried tomatoes soaked
  • 1 avocado
  • wedge of lemon
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp ginger powder
  • 1 diced tomato
  • hot pepper or hot sauce to taste
  • pinch of seasalt
  • 1 bunch of collards, romaine, or kale, for the "taco" wrap
  • nutritional yeast for the "cheese"
  1. Drain & blend walnuts in processor with a bit of olive oil till chopped
  2. Throw in sun-dried tomato, spices, squeeze of lemon, and pepper/hot sauce till almost smooth
  3. Place the walnut mixture on your greens and add avocado, tomato, cilantro, and nutritional yeast for a cheesy topping.
  4. Roll that shit up and smoke it... wait, I meant...
  5. eat it ;)
